EU Protected Designation of Origin (PDO): PDO as defined by European Union Law, was designed to protect the names, reputation, quality, genuineness, and authenticity of regional foods. The law also protects the ingredients used and processes to make the product. As an example - feta must be made with sheep and/or goats milk from the region and produced using traditional methods, which requires straining without pressure. Mt. Vikos Cheeses that are protected by EU Protected Designation of Origin (PDO) are: Feta, Halloumi, Manouri, Kasseri, and Kefalotiri.
